Dr. Paraschos Christodoulou graduated from the Department of Chemistry (2013) at the National and Kapodistrian University of Athens (NKUA) and holds a Master’s Degree (2016) specializing in metabolic analyses of wine for origin characterization and studying their antioxidant activity in cell systems (in vitro). He completed his PhD in 2023 (DBB, University of Thessaly) focusing on the development of innovative foods with beneficial effects on the human intestinal microbiota. Currently, he is a postdoctoral researcher at the Department of Food Science and Technology, focusing on Food Science using cutting-edge technologies and data analysis.
His research focuses on characterizing the metabolic profiles of food matrices and biological fluids, specifically:
- a) Using Nuclear Magnetic Resonance spectroscopy and mass spectrometry, and
- b) By applying multivariate data analysis for statistical data processing.
He has been involved in 9 research projects, presented his research at 14 conferences, and has 9 publications in reputable scientific journals with peer review.
